Fourth of July Breakfast

Nothing like eating a red, white, and blue meal to celebrate your independence!

Ingredients

-1 cup of nut milk (almond milk is my fave)
-1/3 cup chia seeds
-1 banana, diced
-2-3 strawberries, diced
-1/4 cup fresh blueberries

Optional Add-ins:
-1/3 cup mixed nuts, chopped
-1/3 pumpkin or sunflower seeds
-1/4 cup dried fruit (goji berries, craisins, etc.)
-2 tbsp. hulled hemp seeds
-1 tbsp. nut butter
-1 tbsp. cacao nibs
-2 dates, pitted & diced
-1/4 tsp. cinnamon
-1/8 tsp. cardamom powder
-1/2 tbsp. maca powder
-1/4 tsp. bee pollen

Directions: Whisk chia seeds into milk. You'll want to allow 5-10 minutes to pass for chia to become gelatinous before digging in! (To avoid wait time, mix ahead of time--even the night before & refrigerate!) Or, in the meantime, choose from the optional add-in list to mix together a breakfast fit to your taste. Add additional ingredients to chia milk concoction at any time. Dice the fruit and add to top of chia mixture (which will become thicker as the chia seeds expand with the milk).
