What's a vegetarian to eat in the land of meat and kimchi?
I've become quite the chef since arriving in Korea as a freegan (I wasn't completely vegan but veered in that direction). I knew it wasn't going to be easy--I mean come on, Koreans view ham as a vegetable! But luckily I met like-minded vegetarians who pointed me in some helpful directions. Since then, I've been fortunate in steering others in a health conscious direction, too--we even began a cooking club! All is not lost in the land of meat and kimchi! (And kimchi is wonderful, fyi!) 
So here's something I should have started long ago... what's a girl (or boy) to cook in Korea--where recognizable ingredients seem in short supply? And forget about avocados, limes, and cilantro, because that's just not going to happen here!

And now for the main attraction, what I (and now you, too!) can be cooking in Korea (or wherever you are!!)
